Azienda Agricola Dario Prinčič is located in Oslavia, not far from the Slovenian’s boarder. 10 hectares densely planted with a Southeast exposure. The land is very steep, the soil is clay and sandstone, Everything here is done by hand. Grapes are de-stemmed and placed in open wooden vats for the maceration with no temperature control, no use of yeasts nor sulfur. Maceration depend on the variety of the grape. After pressing, the go to wooden barrels and barriques. Before bottling, the wine stays 6 months in stainless steel tanks for natural fining. During bottling, small dosis of sulfur (15–20 mg/l) are used. The wines are bottled unfiltered.
