Additional Information

"Saperavi ferments in Qvevri without stems, for 3 to 4 weeks until the sugar is completely dissolved. After the fermentation, Chacha and the grape juice are segregated. The stirring: 4-6 times a day in first 4 weeks of fermentation. In March, the wine is transferred from one Qvevri to another to release it from the remaining sediment. The same process is carried out in the spring.

THE LONGER THE SAPERAVI IS AGED IN QVEVRI, THE MORE VIBRANT FLAVOUR IT GETS."
