"Rkatsiteli ferments in Qvevri for 3 to 4 weeks until the sugar is completely dissolved. After the fermentation it stays on chacha (skin) for six month.
The stirring: 4-6 times a day in first 4 weeks of fermentation.
In March, the wine is transferred from one Qvevri to another to release it from the remaining sediment. The same process is carried out in the spring.
The longer Rkatsiteli is aged, the richer its flavour becomes."
