"Kisi ferments in Qvevri for 3 to 4 weeks until the sugar is completely dissolved. After the fermentation it stays on chacha (skin) for six month.

The stirring: 4-6 times a day in first 4 weeks of fermentation.

In March, the wine is transferred from one Qvevri to another to release it from the remaining sediment. The same process is carried out in the spring. "
