Additional Information

The grapes are foot crushed and soak for 18 hours before whole bunch pressing to old oak barrels. I made a vineyard starter (pied de cuve) with Chenin grapes that fermented naturally in the vineyard under the vines. I then inoculated my barrels with this natural starter ensuring a healthy vineyard yeast and strong ferment. The wine is lightly stirred during the full moon in winter.
