The Ajola is a small farm made up of vines and olive groves. The wines we make are simple, rustic and easy to drink. They record the tradition of i vini contadini, wine’s that have always had a place on the table of those who work the land. We try to best interpret the unique differences of each year, paying attention to the changes that both we and our plants undergo. Our aim is to construct a new and healthy way of farming, picking up the pieces from the rubble left by industrial agriculture – one that is hopefully more honest and aware of both place and history. In the field we take inspiration from many diverse sustainable agricultural traditions and apply these practically within our agro ecosystem. Nothing is added to the grape must in the cellar and the wines are not filtered or fined.
