Agri Segretum ( La Segreta) is located on 80 hectacres of olives, forest and plains in Collazzone, Umbria in Central Italy. 7.5 hectares of sunny southwest facing land is dedicated to growing and producing our organic wines. Set at an altitude of 300 meters, we are in the heart of the DOC TODI wine denomination. We began our venture in 2002 with the goal to“saturate in the locale” and to ensure authenticity. Our first step was to re-unite indigenous vines with our Umbrian soil, such as Sangiovese, Sagrantino, Malvasia Nera and Colorino. Our production is artisanal in size and scope. All of our work in vineyard and cellar is intentionally manual – we carefully prune by hand, we pick by hand and, above all, fermentation occurs spontaneously on naturally occurring yeasts. During harvest and fermentation we are up at the cantina late at night and early every morning pushing down the grape skins and mixing the juice. Each step is carefully considered: if the wine needs a bit more time to naturally filter by gravity, we will simply wait. The vine or the wine dictates timing, not the other way around. We love this way of life.
