Riesling vines are aged, on average, 40-years-old.
Manual harvest. the grapes are carried in crates that are 30 or 40 cm high, (the result is that the grapes arrive at the winery in a beautifully intact state).
• The grape juice is left to settle - the heavy sediment is removed. The lees remain in the wine until bottling.
• Nine months of wild yeast fermentation in stainless steel vat with very limited temperature control (using
‘drapeaux’(= pipes to run cold water down the walls of the vats), in the estate’s naturally cool winery*.
• 22 months’ lees ageing in stainless steel vat.
• Full malolactic.
TASTING NOTE: colour: yellow with silver flashes, nose initially peppermint, leading immediately to
distinct citrus fruit (lemon/lime), gradually notes of spices (pepper, clove, nutmeg and camphor)
develop. palate: an attractive acidity, which emphasises the impression of elegance and finesse. On the palate there are echoes of the citrus fruit found on the nose (lemons and limes). Throughout the tasting experience it is evident that the weight of this cuvée and the saline streak balance each other perfectly. The finish evokes spices.
