Grapes are pressed and the juice ferments spontaneously in stainless steel tanks in contact with the skins for about 5 days, to produce a slightly orange wine. The wine is racked once after alcoholic and malolactic fermentation complete, and goes back into tank for 6-8 months of elevage.
