  • Other Information: Using Méthode Ancestrale, we crafted a dry, crisp, and delicious Pétillant Naturel. This refreshing Pét-Nat brings out the pure fruit flavors of our Petite Sirah grape and its terroir, with notes of citrus, golden raspberries and pomegranate. A well-balanced wine with a good tension between flavors, acidity and low alcohol, and a nice mouthfeel brought by the live yeasts. The fruit was carefully hand-picked and delivered to the winery in the cool early hours of the day, hand-sorted, and fermented using only wild yeasts from the vineyard. We bottled the wine prior to completing its first fermentation, allowing the fermentation to finish in the bottle without any additives. This method imparts a gentle carbonation to wine by trapping the carbon dioxide produced during the fermentation of the natural sugars from the grapes. This wine is alive and can be aged for many months, producing different flavor profiles over time as the wild yeasts continue to slowly mature the wine in the bottle. Unfined, unfiltered, contains only naturally occurring sulfites. Alcohol 10%, pH 3.2, Acidity 5.4g/L, Residual Sugar 14.5g/L. For the bottle, we choose the old flip- top bottle format which reminds us so much of the lemonade bottles of our childhood. And the pure and happy art from Ylias Zajac, who was 8 years old at the time, is a perfect match to that pure and happy wine! Only 415 cases produced.
