Our small family winery is idyllically surrounded by the forest of unique ice holes in the Dolomite region of South Tyrol in northern Italy. Out of the conviction that nature is quality in ist highest form and the respect for nature, we have been cultivating our vineyards organically with a lot of dedication and passion since the mid-1980s. As a pioneer of organic viticulture, Rudi Niedermayr, Thomas' father, founded the Bioland South Tyrol association and, as a result, switched to the cultivation of resistant varieties in the early 1990s.

We are convinced that good wine can only come from vines rooted in healthy soil and a variety of biodiversity. What makes our wines unique and characteristic takes place primarily in the vineyard. Our focus is on puristic character wines with depth and minerality, that reflect our soils and terroir and are allowed to mature in the cellar for several years.

In addition to 5 hectares of vines, which grow around 500 meters above sea level in dolomite porphyry soils and which are influenced by the special cool microclimate of the ice holes and by the impressive Gandberg rock massif that rises behind our farm, our diverse farm organism also includes 1 hectare of fruit garden, vegetable gardens, chestnut trees and animals. In order to break up the monoculture, grains, potatoes, zucchini and many other crops grow between our rows of vines. Since 2005 we have been breeding our own grape varieties, which grow in our mother garden on the farm in our soils and climatic conditions.
