We are winemakers on the southern slopes of Mount Etna, Sicily, at 870 meters a.s.l.. We grow native grapes - red Nerello Mascalese and white Carricante - as naturally as possible. A significant portion of our vineyards are historic vines, up to 70 years old. We use only indigenous yeasts, starting fermentation with the pied de cuve of our grapes. We also use terracotta amphorae for both fermentation and maceration (on the skins of white wine), and for aging. Sicily's latitude, excellent southern exposure, and altitude allow our grapes to ripen slowly, achieving exceptional phenolic ripeness. We use no chemical fertilizers or pesticides and harvest the grapes by hand. Minimal intervention and experimentation best describe our winemaking philosophy. We are a small family winery focused on quality and sustainability. The result? A wine worth drinking!
