The Zampaglione family are proprietors of a historic and organic grain farm in the Alta Irpinia. In 2003, they decided to create The Don Chisciotte vineyard with 3 different parcels of Fiano. The wine is aged and fermented in stainless steel tanks, macerating on the skins and resting on the lees. No fining and no filtration.
