Patistis Wines has been my personal project since my return in Greece at 2017. At my hometown of Argalasti on mountain Pelion we are working with patience to revitalise a once well known area for the cultivation of vines, figs and olives. Our goal is to promote, educate and expand the artisanal way of cultivation and to raise the awareness of the advantages that organic cultivation and regenerative agriculture brings to rural sparsely populated places that are starting to be impacted by an expanding tourist industry that consumes earth. Winery information: Vineyard: 4,35 ha Olive orchard: 5,65 ha Fruit trees:1,1 ha Production: 13.000-17.000 bottles Location: Argalasti, Pelion, Greece Altitude: 300-400 m Grapes: Xinomavro, Limniona, Assyrtiko, Roditis, Muscat Soil: Sandy Loam, Slate, Calcareous Density of Plantation: 4000-6000 vines/ha Average age of Vineyard: 35 years Vine farming: Organic certified (DIO) , regenerative agriculture, sprayings based on extracts from foraged plants, average copper spraying/year( 85gr/ ha) Soil management: Minimum with limited light tillage when required depending on year, plot and quantity of water over winter Harvest: By hand, Mutliple passages throught the vineyard Harvest Period: Late August- Early Octomber Vinification: Artisanal- No additives- Unfined- Unfiltered with some rare exceptions - Limited or no temperature control during fermentation- 0 to 15 ppm sulfite additions depending on year/label
