We are a young startup rooted in the Italian Dolomites, where nature sets the rhythm and time becomes an ingredient. Here, we create non-alcoholic fermented botanical drinks.

Our team of botanists, scientists, chefs, and sommeliers is driven by curiosity and works with simple, often overlooked ingredients such as white and red beetroot, allowing fermentation to unlock depth, texture, and character. Each drink is then refined through maceration with selected botanicals, spices, and roots.

The result is an unexpected drink where simplicity is transformed into complexity, ideal for food pairing and thoughtful moments at the table.
