Kappa is a 4 hectare vineyard facing the sea. The soil is clay/chalk, full of fossils shells, alluvional and silex/chalk. Fermentation is spontaneous with natural grape yeasts. The extraction process is slow and careful, without clarifying, filtering or stabilizing. We work the vineyard with horses and use biodynamic and permaculture methods in the cultivation of the vines.
