Passionate about unveiling the soul of old stone structures and creating natural wines, Isabelle Jolly & Jean-Luc Chossart moved to the heart of the Vallée de l'Agly in 2005. The catalan historical estate they bought resonated with their own interest for the wines of yesteryear and proved to be the ideal location to develop artisanal wines inspired by ancestral methods. This inspiring encounter between winemakers and the Mas Ferriol led to the residence of a MUSCAT de RIVESALTES in aged barrels, a RIVESALTES ambré hiding out in demi-muids, a RIVESALTES tuilé lazing in cement tanks and a RANCIO sec in demijohns, later cohabitating in a solera. The vineyard is cultivated according to the rules of organic method in order to produce natural wines. Indegenous yeasts only, no fining method, no filtration, no oenological products and no sulfites at any time of the process.
