Founded in 1584, the Fischbach winery in Traenheim, near Strasbourg, has been passed down through over 15 generations of winegrowers. Revived in 2017 by Jean Dreyfuss, it has grown from 3 to over 8 hectares and is certified organic. The estate emphasizes soil health, biodiversity, agroforestry, and biodynamics. Manual work is preferred over mechanical, and natural methods over chemical. Grapes are hand-harvested and fermented using only native yeasts. Wines are made with minimal intervention—no additives, filtration, or sugar adjustment—and are aged in stainless steel, oak barrels, or stoneware amphorae. The goal is to produce wines that reflect purity, balance, and drinkability.
