Since 2015, we have been running our 12,5 ha organic winery in the Corbières. Most of our vineyards have been worked organically (certified) since 2001. The vineyards are situated in the mediterranean back country at higher elevations (250-330m above the sea level), rather north-north-east exposed in small on clay & limestone soils of different geologic eras. The rather cool climat allows us to pick grapes at their good ripeness, maintaining higher acid levels and low pH. This allows us to have keep low SO2 levels and to preserve microbiologically stable wines.
