A reality that literally comes from a dream: this is the cellar of Damijan Podversic, which took shape from the desire of Damijan himself, always driven by the desire to recover and enhance old abandoned vineyards, belonging to a terroir particularly suited to viticulture, such as that of the hills of Gorizia. The first small plots of land purchased by Damijan on Monte Calvario, today are part of what are the six hectares of vineyards on which the company can currently count. The cultivated varieties are those of Ribolla Gialla, Malvasia Istriana, Friulano, Merlot, Cabernet Sauvignon and Pinot Grigio. Furthermore, other small plots of land, partly belonging to Damijan’s grandfather and partly for rent, contribute to the production of Chardonnay, Friulano and Malvasia Istriana. Among the rows, wise agronomic choices and natural and environmentally friendly and eco-friendly methods are adopted, so following the rhythms of nature and the moon phases for all processes, we start from mowing the grass and pruning for go all the way to the harvest, strictly manual and in boxes, carried out exclusively at optimal ripeness. Also, the vinification, carried out entirely in wood, follows the moon phases, the slow rhythms, and the tradition, with prolonged contacts between the skins and the must, until the end of the fermentations, interspersed with punching down several times a day. The excellent quality and perfect maturity of the grapes and seeds, combined with the inspired hand of Damijan in the cellar and his knowledge of nature and wine, means that a disconcerting purity is expressed in the wines themselves, revealing the sense of smell and palate an intense and defined territoriality.
