The Domaine du Clot de l'Oum is nestled in the heart of the Fenouillèdes region, between Agly and Têt valleys, on the first eastern foothills of the Pyrenees. A vineyard of 12 ha, whose wines are certified Organic Agriculture since 2000 and produced as naturally as possible. Spread out between 400 and 600m of altitude, parcels of the vineyard are essentially made up of old vines. Our way of producing wines implies a respectful management of the vines, environment and soil, allowing to reveal all its potential. Biodynamic methods are used since 2009. Our vines are not irrigated, they are harvested manually and trained in a way that promotes the biodiversity. The ageing of our cuvées is carried out in tuns and patinated barrels, in order to take advantage of the micro-oxygenation of the wood and to limit the use of new wood to the strict minimum. Our wines receive no imput, expect minimal doses of sulfur (<30mg/l).
