Dos Búhos is a family-run organic winery set high in the Mexican highlands at 2,000 meters, where sunlight, volcanic soils, and dramatic diurnal temperature shifts shape grapes unlike any in Europe or the New World. This is a terroir of extremes — intense sunlight by day, cool mountain nights, and ancient soils rich in minerality — yielding wines of vivid character, energy, and depth. For four generations, we have farmed this land organically (certified by Oregon Tilth), working in harmony with nature. Our minimal intervention approach — fermenting only with native yeasts, no unnecessary manipulation, and patient aging — allows the Mexican terroir to express itself fully, unmasked and alive. More than a winery, Dos Búhos is a creative sanctuary: we welcome artists, musicians, and chefs to explore the connection between land, culture, and creativity. Our historic chapel houses Contemplo, an immersive video art experience, making every visit a dialogue between art and nature.
