Bistro Louis Séverine is the brainchild of Louis Broderick, from Basket Range Wine, Australia and Severine Perru, former wine director of The Ten Bells, NYC.
While we were working a very boozy harvest in the Jura, we had the opportunity to make our first wine together in this emblematic region after a chance encounter with some unicorn fruit (thanks, Tony!). We didn’t need more to fire the sparks of our project!

Soon after, living in Australia at the time, we established our winery, making our first cuvées in 2019 and producing small volumes of thoughtful wines every year. Having always had a coup de coeur for Alsace and its grape varieties, we made the move to settle down there in 2023. With the generosity of our dear friends Christian Binner and Jean-Pierre Rietsch, we have been able to vinify two cuvées in 2023, having only arrived in France a month before harvest! Thanks to their help for hosting our barrels, our project here was off the ground.

2024 marks our first full vintage in Alsace. We sourced organic certified grapes from Alexis Dietrich, in Dambach la Ville: Riesling, Sylvaner, Pinot noir and Muscat ottonel. The exceptional granitic terroir is driven by minerality and confers a unique touch to the grapes.

The Riesling, surrounded by the forest, is the highest on the steep slopes next to the Frankstein Grand Cru. Here the austere granite brings a tense complexity, underlined by a chiselled citrus character. The Muscat ottonel is underneath, characterised by
fragrant and delicate aromatics. The Sylvaner grows on slightly deeper soils, lending to more flavour and gourmandise. The pinot noir vines are young and bring all their juiciness and red fruit notes.

2024, as with 2023, has been marked by the generosity of our friends, helping us to properly establish our winery. Big ups to Yannick Meckert for providing us a space to make wine, to Ilona and Denis from Ô Faya Farm in the Swiss Alps and to Lambert Spielmann for giving us equipment. We are extremely grateful. Cheers!

We vinified a little bit under 5000 litres of wine, aged mostly in old oak barrels. 3 cuvées have been bottled in May 2025, along with our collaboration with Christian Binner, Chrysalis. The rest of our riesling is staying in barrels for a longer élevage, and maybe a crémant base?

2025 has been a big year. Having taken over a hectare of vines thanks to Christian, Clément and Laurent, we are extremely excited about the opportunity to vinify our own grapes. These vineyards, aging between twenty and forty years, have always been managed organically and biodynamically; practices we value dearly. It’s an honour to look after them and they provided us with a beautiful first harvest. Our estate wines, over 6000 liters, are now resting in barrels, waiting for a spring bottling and some more aging.

Stay tuned!
