Our dream is to create a great wine, based on our understanding of the vineyard, its terroir, and the native grapes of the Mencia varietal. Our mission is to create a sustainable project. We are an artisan producer creating traditional wines tied to the local culture, which we hope will become a benchmark for quality wine in El Bierzo.
We also do blended wines from different varieties in the same plot, just fermented grape juice. Nature-friendly and low-intervention wines that express their place of origin that came from organic agriculture that stimulate microbial life, boost the inmune systems of plants, and improve soil fertility.
In the cellar, we don’t use additives and our grapes contains everything the wine needs. We manage spontaneous fermentation and malolactic fermentation in oak barrels. We only add a few quantity of sulfites after malo, and another little bit before bottleling, with level below 25 mg/l.
