  • Other Information:Varietal: Syrah Vineyard: SunHawk Farms (Demeter-certified Biodynamic) SunHawk Farms was planted twenty years ago by a progressive serial entrepreneur who puts his money where his mouth is when it comes to the environment. John Schaeffer bought the 300 acre property and built his ideal retreat up the mountain next to Duncan Springs Peak. John’s vineyard includes a 17th century inspired lavender labyrinth at the top of the vineyard, a 2,500 tree olive orchard, and 4 blocks of mixed (predominantly Rhône) red and white grape varieties. The vineyard has an amazing view, which obviously makes the wine taste better. There is an almost volcanic quality to the wine being near the springs. Method: The fruit was picked at 20 brix, which lends an edge to the tannin. 75% whole clusters. Cap manipulation was a combination of pigeage and pumpovers for a total of 40 days on the skins before being pressed to neutral French oak for 10 months élevage. Unfined, unfiltered and untouched. No sulfur was harmed in the making of this wine ABV: 12% Case Production: 75
