    • This wine is fermented spontaneously.
    • Other Information:The fruit was handled as gently as possible, and after picking was hand-sorted and pressed to small holding tanks. Once each variety was harvested a juice blend was created from different portions of Chardonnay, Riesling and Pinot Gris. The juice blend was naturally fermented in 500 litre French oak puncheons with the wild yeast found on the fruit. Following primary fermentation the wine went through malolactic fermentation, which occurred naturally during 13 months in barrel.
