  • Other Information:Alcohol: 14.5% Bottle size: 75cl Certified Organic - Suitable for vegetarian only Average age of vines: 50 years Hand harvest into small boxes–allows the grapes to arrive at the winery intact. Part whole bunch/partially destemmed. Trodden by foot. Natural yeast, traditional fermentation for 7-21 days in traditional wooden tanks. At the end of thealcoholic fermentation the wine is pressed. Raised in barrels, in the cellar, for 6-14 months according to the vintage. Racked once before bottling. Tiny amount of sulphur used at bottling. This is a model "Côte de Beaune wine" expressing red flowers (roses, cherry-blossom) and then in the mouth: cascades of stone fruit supported by lively, lacy acidity.
