Alcohol: Bottle size:75cl Age of vines: Young Vines 85% Spergola, 15% Malvasia Aromatica di Candia Spergola from vines owned by the family of Roberto’s wife. It is initially fermented in vat, before a little must from the same vintage is added to the wine at bottling to cause the second fermentation. The wine rests on the lees in the bottle for around fifteen months before disgorgement. A clean, crisp sparkling wine with gentle aromas of citrus and herbs and plenty of savoury complexity, it makes for a wonderful aperitif.

The Quarticello farm is located in Val d’Enza Reggio Emilia on the bank of the river of the same name that divides the provinces of Reggio Emilia and Parma, at the foot of the Tuscan-Emilian Apennines. The production focuses on native vines such as Lambrusco Maestri, Lambrusco Salamino, Lambrusco Grasparossa, Malbo Gentile and Malvasia di Candia.
