It is the white wine of Pacina.The spontaneous fermentation takes place in cement tank and the skin contact lasts around 10 days. Thanks to this period of maceration, the wine can intake all the substances that characterize the grape varieties but also all the elements that consent the wine to age without the use of external substances. For this reason, the wine is then aged in oak and acacia botti for about a year. The wine is not filtered and there is no addition of sulfites. La Cerretina 2017 is a rich and intriguing white with a tasty and salty long end. Pācina is an old monastery of the 10th century surrounded by vineyards, olive groves, fields, and wooded areas and nestled on the Chianti hills in Castelnuovo Berardenga just a few kilometres east of Siena. Pācina is a special place with a long history, agricultural and otherwise, which has maintained it’s traditions since time immemorial. It’s origins lie in Etruscan times, from which the very name is derived from Pacha, or Pachna, the name of the Etruscan god of wine, the equivalent of the Greek Bacchus. Today Pācina is a farm which produces organic wine, olive oil, cereals and pulses. The farm consists of 65 hecatres, of which about 11 are dedicated to vineyards. The grape varieties were cultivate are all indigenous to the region: Sangiovese, Canaiolo, Ciliegiolo, Tuscan Trebbiano, and Chianti Malvasia. There is also a small plot where we grow Syrah grapes. The vines range from 5 years to 50 years old, with some plants much older than that. The farm has been a certified organic producer for more than 20 years; no chemical or artificial products are used at all. All our fields are left to develop spontaneously, allowing a continual enrichment of biodiversity that brings continual ecological benefits. The Tiezzi-Borsa family has been the happy custodian of this wonderful place for almost a century. Giovanna and Steafano have been the current custodians for 30 years now, and along with their children, Maria and Carlo, work to maintain the natural and cultural richness of Pācina.
