Burgundy, France
Gilles and Catherine own 3 hectares of up to 126 years old Chardonnay vines in southern Burgundy. They work organically and no sulphites are used at any stage. Everything is done by hand, each vineyard is vinified separately with indigenous yeast and wines are kept for a long elevage in enamelled steel vats.
