- This wine is fermented spontaneously.
- Other Information:Dolcetto (San Luigi Vineyard) and Nebbiolo (Galli Vineyard). Hand-harvested into small bins. Spontaneous fermentation. Pressing and racking at the beginning of the fermentation. 1-2 days of maceration. Aged in cement for 6 to 8 months until bottling. Bottled with minimal sulphur (38mg/lt) and without fining.
