After working for five years in Alsace, Elian returned to his native town and built a simple winery in Cocumont. He became the first winemaker to produce wines under the Cotes-du-Marmandais appellation. He produces biodynamic wines from Bordeaux varieties as well as local Abouriou. He uses native yeast fermentation and vinifies each parcel and grape variety separately.
