Spontaneous skin- fermented wine in amphoras made of Sauló soil from our vineyards· 3 months skin-contact. Soil Sauló (sandy granitic), Altitude 150m - 300m, Orientation South, Rainfall 600 mm/year. Organic “natural” amber wine made from the Pansa Rosada and Pansa Blanca variety (Xarel·lo vermell & Xarel·lo). The grapes are harvested by hand in an extraordinary state of health. After a light pressing to extract only the first press must, the grape skins are not removed, and stay in contact during two months with the juice during the spontaneous fermentations in amphoras made of Sauló. We aim at increasing the tannin structure and “terroir” character: the shape of the amphoras enables the free movement of the lees, thus providing a “natural bâtonnage ”. No sulphites or any other products are added throughout the process.
“We constantly want to improve and delve deeper into organic agriculture, to obtain the purest grapes and wines”. With the aim of achieving quality wines without any addition of sulfites in the winemaking process, the Pujol-Busquets Guillén family is strengthening efforts towards its organic philosophy. CELLER DE LES AUS is based on the accumulated knowledge and experience of many years dedicated to wine. This pioneering project is led by Mireia Pujol-Busquets, who continues on the path of her father, Josep Maria Pujol-Busquets, owner and technical director of Alta Alella. As a tribute to all those who sing their melodies to create the soundtrack of the vineyard, these natural wines and cavas are named after the birds that live in the Serralada de Marina’s Natural Park.
