- Other Information:Asinoi is made by grapes harvested in the fist half of Sept 2014 from four different young vineyards around San Marzano Oliveto ., Grapes were fermented in open fiberglass tanks by indigenous yeast with 20 days of skin contact, malolactic was made in two different steps, before and after the end of the year., We added so2 during the fining racking and before the bottling only if it is necessary .
Carussin is made by Bruna, Luigi, Matteo and Luca who care for 15 Ha of vineyards. Alongside winemaking, they each have a side project. Bruna and her ten donkeys work with kids, Luigi volunteers with associations in San Marzano Oliveto, Luca is a craft brewer and his brother Matteo grows various greens.
