Moreover internal berry fermentation gives the best expression of the fruits of Mediterranean forest and undergrowth. The fermentation is controlled at low temperature (less than 24 degrees). The press is very subtle and smooth just before going into French oak barrels (2 wines) for breeding and refinement., Elements of consistency of this wine are the biodynamic cultivation of vines that guided him during vinification, to express the aromas of height where the vineyard is planted at 750 meters above sea level.
