Alcohol: 12.5% The vines are aged between 20 - 30 years • Manual harvest - the grapes are carried in crates that are only 30 or 40 cm high, (the result is that the grapes arrive at the winery in a beautifully intact state). • The grape juice is left to settle - the heavy sediment is removed, while other particles and the lees remain in the wine until bottling takes place. • Loose filtration through Kieselghur / No fining. • 12 months of wild yeast fermentation in stainless steel vat with very limited temperature control (using pipes to run cold water down the walls of the vats), in the estate’s naturally cool winery*. • 22 months of lees ageing in stainless steel vat. • Full malolactic.

TASTING NOTE: colour: pale yellow with silver flashes, a striking limpidity. Nose: powerful nose with touches of toasted cereal grains, peach, apricots, clementine, wine lees as well as a subtle hint of undergrowth, this expansive nose is a direct result of the excellent maturity of the grapes (all thanks to the high level of sunshine received by the grapes and of the top quality terroir) palate: good volume and weight. the volume is pinned by a satisfying streak of acidity, which upholds the length of this wine. it offers, as well, citrus fruits such as blood orange, and ripe lemon, the whole being enhanced by touches of thyme, rosemary and honey. the finish is noteworthy for its powerful saltiness, and spiciness.

Achillée is a passionate and committed team that has enabled the emergence of an innovative field. The vineyard has been managed in organic farming since 1999 and biodynamic since 2003. In 2016, the two sons of Yves Dietrich, Jean and Pierre, joined the adventure to give it a big boost, to become independent. Quickly accompanied by an equally passionate team, they built together a bioclimatic cellar where they now vinify the treasures of the family estate.

With Pépin, we make natural wine accessible both in price and taste, thanks to precision work. As far as design is concerned, we are fortunate to collaborate with the artist Michel Tolmer, well-known in the world of natural wine. Each cuvée comes from vines cultivated in
Organic Agriculture, harvested by hand, without any input in the winemaking process, while using only indigenous yeasts (from the cellar and the farm) and without adding sulfites.
