- Other Information:In the vineyards: Vines are 20-30 years old. The yields are pretty low (20 to 40 hl/ha), which gives us a lot of fruit and structure. Hand-picked in small 10kg cases, the grapes were directly sorted in the vineyards.In the Cellar: Grapes are destemmed and crushed, then sent to tank without any sulfites or yeast addition. Each variety is fermented separately and macerations can go from 2 to 5 weeks depending on the style we look for. Extractions are soft but significant, with daily pump-overs and/or light punching down. Once alcoholic fermentation is completed and the wanted structure acquired, digging out and pressing. “Press wines” are generally separated from the “Free run wines” and will be used later in the blends. Each variety is aged in tank for 4 months then the different components are racked and blended. Bottling mid-march without fining, filtering or sulfites addition. Sediments may then form in the bottle with time. Total production: 3,300 bottles.
