Our vineyards grow on rolling hillsides, which have a wavy appearance - hence our name ('Papari' means horse mane in Georgian). We have been in conversion to organics since 2014 (controlled by Caucascert) and we received certificate for the first half of the vineyards in 2018. Starting from 2019 all of our vineyards are officially bio. We produce our wine using the Kakhetian method, in the village of Akhasheni. We ferment wine using only naturally occurring yeasts.
