Saravá was born from a desire to explore new corners of the Lima sub-region in Vinho Verde, a region where all grapes are seen as having the same financial value. It was born from the curiosity to vinify less common varieties, to discover the different corners of the sub-region and the different expressions of the varieties in different soils, exposures, types of vineyard management, etc. The approach used focuses on experimentalist oenology, with a minimum use of additions or physical oenological interventions. In 2022, we began to care for 7ha of a vineyard in the Douro Baixo corgo that is over 80 years old, planted by Miguel Viseu's grandfather, from which the SARAVÔS wines, a white and a red, were born in 2023. The estate is located in the village where Miguel lived until he was 20 years old. Since we have no land in Vinho Verde, we created a system of valuing the grapes based on the type of agriculture carried out and with technical support and close monitoring, with the greater the value the more ecological the farmer is and adhering to our protocol. We place a new value on the quantity produced, encouraging the WINE GROWER to find balance in his vineyard. Reversing the paradigm of more tons, more yield.
