Meet the RAW WINEmaker: an evening/dinner with Marina Palusci

Salt+Wine is excited to announce its first event, in collaboration with RAW WINEmaker Max D’Addario (Iron Man).
This dinner will be held in a private residence in Berlin – Friedrichshain on Sunday, May 13th.

Our first guest, Max Iron Man of Marina Palusci, is a shining star and a pioneer of natural wines in Italy. His wines and extra virgin olive oil power some of the best restaurants in the world, including Osteria Francescana (Modena – Italy), Ekstedt (Stockholm – Sweden) and Fare Cibo (Vicenza – Italy).
A five course menu, crafted by our Chef in Residence and Salt+Wine founder Giulia Michetti, will accompany Max’s wines including sparkling pet-nat and a diverse array of whites and reds.

SALT+WINE is a concept envisioned by Giulia Michetti and Marco Callegaro, both industry professionals trained in high-end restaurants and wine-bars between San Francisco and Milan.
Their intent is to provide an exceptional standard of hospitality professionalism while breathing new life into the food and wine scene in Berlin.

Out of College, Giulia moved to San Francisco and trained with Chefs Michael Tusk of Quince and Cotogna, Dominique Crenn of Atelier Crenn and Petit Crenn. Upon her return to Italy, she ventured with Chef Andrea Ribaldone and opened Osteria Arborina in Barolo (Piemonte), awarded a Michelin Star just after 9 months of operation.

In a departure from her fine dining roots, Giulia will explore a more accessible, yet equally creative and innovative California-inspired menu. Giulia’s approach will be vegetable-centric, with dishes showcasing how they can be the star player of a dish, rather than just an accoutrement. While the menu will not be vegetarian, meats and other proteins will play a secondary role.

Who’s Marco Callegaro?

Born as lawyer, but for the love of wines became sommelier. For 9 years was ” right arm” of Luca Sarais, boss of Cantine Isola in Milan.
An expert of wine, a dreamer, an importer, a distributor, a (wine)-storyteller and a crazy guy with a winebar in Berlin: Cantine Sant’Ambroues.
His wine-bar lists natural-bio-classic and showcases “little” winemakers with “Big” wines, such as Tenute Dettori, Barraco, Vignai da Duline, Maga, Feudo dei Gelsi, MarcoSara, Massa, Monte dall´Ora.


Since his humble beginnings in 2004, he has completely transformed the way we talk about non-interventionist, natural wine with a true sense of place. If you’re not already familiar with his wines, it’s probably because they sell out so quickly! Handmade, small-production wine that is incredibly food friendly and unlike anything else coming out of Italy right now.
