METHOD This beer is produced respecting ancient brewing traditions, but with local features. The beer, produced with traditional “turbid mash” method, matures for 12 months in oak barrels. During this period a mixed fermentation by wild and indigenous yeasts and lactic bacteria occurs. At the end of this long, slow and mixed fermentation, we add must of our Garganega grapes, part of which dried in vine, to start a secondary fermentation and to give complexity and unique flavours.
